Influences from ancient empires have left their mark on its culture, landscapes, and, most notably, its cuisine. This journey takes us from the vibrant streets of Palermo to the historic city of Catania, offering an immersive experience in Sicily’s rich culinary and cultural heritage.
Meet your Guide
Kaelin Ulrich
Kaelin, the son of famed chef and the founder of the Seasons of My Heart cooking school Susana Trilling, was raised in Oaxaca and developed a deep appreciation for food and Mexican cultural traditions. Inspired by his mother's commitment to authenticity, Kaelin recognized the transformative power of cooking.

He values growing his own produce and sourcing quality ingredients, a practice he learned on his father's tomato farm.
Kaelin began his culinary career in 2010 as a line cook at Omni La Mansion del Rio in San Antonio, TX, progressing to lead line cook at Omni's Mokara Hotel and Spa by 2012. He advanced as a sous chef at Hugo's and Caracol in Houston, TX, then as executive chef at Bajo Sexto Taco in Nashville, TN, located in the Country Music Hall of Fame. Seeking new challenges, he staged at renowned restaurants like Blue Hill at Stone Barns, Eleven Madison Park, and Noma's pop-up in Tulum, MX. By 2018, Kaelin served as a Chef Consultant at the Michelin-starred Oxomoco in Brooklyn, NYC, and later opened La Calenda, an authentic Mexican restaurant by Chef Thomas Keller in Yountville, California.
Kaelin's journey has now led him to Seasons of My Heart Cooking School, where he has joined as a partner and CEO, bringing his passion for Mexican cuisine and commitment to authenticity.
Hands-On Culinary Experiences
Sicily’s culinary delights are at the heart of our experience. We’ll go truffle hunting with an expert, taste fresh ricotta made by a traditional cheesemaker in a remote countryside hut, and take part in an olive oil tasting. A stop in Modica offers the chance to learn about the island’s famous stone-ground chocolate at a top bean-to-bar chocolate maker.
At a local cooking school, young chefs will guide us through a hands-on Sicilian cooking class under the instruction of our friend, Chef Mario Traina. Throughout the trip, we’ll indulge in Sicily’s signature dishes, from caponata and timballo to busiate pasta made with ancient grains. We’ll sample an incredible selection of Sicilian wines, fresh seafood, local sheep’s milk cheese, and the delicate, must-try Zabbina.

What does the price include?
Ten nights at unique four- and five-star accommodations; transportation to the trip’s starting and ending points; private tours with local guides and cultural experts; exclusive tastings; guided activities, hands-on workshops; adventures and expeditions; entrance fees; daily breakfasts, most lunches and dinners; local beverages with meals.
What does the price not include?
International roundtrip airfare; travel insurance; activities not included in the trip itinerary; hotel incidentals including room service, laundry service and hotel bar tabs; food and beverage not included in itinerary; gratuity for tour leader.

Do I need to pay a solo traveler supplement?
For solo travelers, there is a $2,000 single-supplement fee—paid at the time of booking to secure a private room. These spots are limited and available on a first-come, first-served basis.
What travel documents are needed?
Additionally, your passport must be valid for six months beyond your arrival date. Not a US citizen? Please check with the Italian Embassy or Consulate for information and requirements.
What is the cancellation policy?
You may cancel 120 days or more before departure and receive a full refund minus a $1500 per person service fee ($500 of which may be retained as a future travel credit, valid for one year after cancellation). If you cancel on or after 119 days in advance, there is a 50% cancellation fee. On or after 59 days in advance, there is a 100% cancellation fee. See our full terms and conditions for details.
