WHERE WE EAT
The island of Sicily has long been a crossroads of civilizations, shaped by its strategic location on Mediterranean trade routes. Influences from ancient empires have left their mark on its culture, landscapes, and most notably, its cuisine. This journey takes us from the street food of Palermo to the fish market in Catania, offering an immersive experience in Sicily’s rich culinary heritage.
To kick off the food tour, our welcome dinner is at a Michelin-rated restaurant that expresses the Cucina Popolana of Palermo in an authentic way following what’s in season and the Sicilian traditions.
We will enjoy a Mediterranean seafood feast during at stay by the southern coast, trying different fish and preparations from gamberi rossi with olive oil to fish baked in a crust of salt, a method classic to Sicily.
In Catania, we eat at different restaurants from a casual night out with cured meats, local cheese like the Ragusano and Caciocavallo to Sicilian pistachio mortadella, black pork from the Nebrodi region, or Ragusan donkey meat, if you’re feeling adventurous.

Hands-On Culinary Experiences
Sicily’s culinary delights are at the heart of our experience. We’ll go truffle hunting with an expert, taste fresh ricotta made by a traditional cheesemaker in the countryside of Santa Margherita Belice, and take part in an olive oil tasting.
One of the highlights is a cooking class with the Duchess Nicoletta Lanza in her elegant palace in Palermo, where we’ll learn traditional Sicilian recipes.
You' will learn how to make Timballo, an elaborate baked Italian pasta dish, traditionally made for a Sunday meal. Alongside three other courses to eat al fresco in the middle of the vineyards within an Estate.
We will visit a local mill in Sciacca where we will learn about the heritage grains that are preserved and cooked with for bread and pasta. Followed by a hands-on cooking class and a fresh pasta lunch.
At a local cooking school, young chefs will guide us through a hands-on Sicilian cooking class under the instruction of our friend, Chef Mario Traina. Throughout the trip, we’ll indulge in Sicily’s signature dishes, from caponata and timballo to busiate pasta made with ancient grains. We’ll sample an incredible selection of Sicilian wines, fresh seafood, local sheep’s milk cheese, and the delicate, must-try Zabbina.

Historic Sites, Countryside & Coastal Beauty
Throughout our journey, we’ll explore Sicily’s stunning landscapes and historic sites. Starting with the majestic Duomo of Monreale. This guided visit reveals the influence of cultures that defined Sicily, all within one of the most stunning cathedrals in the Mediterranean.
In Agrigento, we visit the breathtaking Greek temples and gain insight into the island’s layered history.
Visiting the picturesque town of Noto, famous for its granita, where we’ll enjoy a tasting at one of the world’s most renowned pastry shops. We’ll make it to the East coast of Sicily for four-course lunch followed by a guided tour of Ortigia and the Tempio de Apollo, Piazza Archimede, and the natural spring Fonte Aretusa Sorgente.
In Catania, we stay in a historic hotel near the city’s best fish market before heading to Taormina, where we’ll enjoy a classic lunch in a picturesque trattoria.

Kaelin, the son of famed chef and the founder of the Seasons of My Heart cooking school Susana Trilling, was raised in Oaxaca and developed a deep appreciation for food and Mexican cultural traditions. Inspired by his mother's commitment to authenticity, Kaelin recognized the transformative power of cooking.
