A culture and Food Tour
Our Mexico City tour runs seven days, during the sunny winter. We eat through the markets of Coyoacán, learn all about the Aztecs with the visit to Teotihuacan and the Anthropology Museum, and spend the evenings between taquerías and Michelin star restaurants. Explore the quaint boutiques and delicious bakeries of Colonia Roma and Condesa. Experience the sunrise on a trajinera in the water ways of Xochimilco. Food highlights

Some of the best eating in Mexico City happens standing on a sidewalk with a paper plate. We take you on a night run to the corner the neighborhood goes to, where the trompo turns until the early hours.
We have lunch at El Cardenal, a lesson in what the Mexican classics taste like when they are made properly. The menu moves with the season and features flavors from across the country, what arrives at the table is a celebration of ingredients and techniques of emblematic dishes.
Our week moves through the full range of the city's table: pastries at Rosetta, Sinaloa-style seafood, a long lunch at the beloved El Cardenal, and late-night taco run. We'll walk the markets of Coyoacán and Xochimilco, taste pulque at a historic pulqueria,and share a wood-fire breakfast on the chinampas of Arca Tierra.
You'll also cook: a hands-on class in the heart of Coyoacán, where we sit down together to eat what we made, and an afternoon with Susana's dear friend, chocolatier Mario Terres. We close the week with a farewell dinner at Maizajo, a Michelin-starred restaurant built around maíz.

Beyond the table
We'll walk the historic center of Mexico City, one of the oldest capitals in the Americas: the Zócalo, the Catedral Metropolitana, Calle Madero and the Palacio de Bellas Artes, where a local guide walks us through murals by Mexico's most renowned painters.
In Coyoacán, we visit the Museo Frida Kahlo and wander the neighborhood's market before lunch.
At Teotihuacán, a UNESCO World Heritage Site, we explore the ancient pyramids with an expert guide before lunch at La Gruta, the century-old restaurant set inside a natural cave beside the ruins.
A highlight of the week is our sunrise ride by trajinera through the canals of Xochimilco, another UNESCO World Heritage Site. At Arca Tierra we'll learn how the ancient chinampas, the floating gardens that once fed the Aztec capital, are being farmed regeneratively today.

Chef Kaelin Ulrich Trilling
Kaelin was raised at Seasons of My Heart, his mother's kitchen and his first classroom. He left Oaxaca at eighteen to cook professionally: sous chef under James Beard winner Hugo Ortega in Houston, at Eleven Madison Park and Blue Hill at Stone Barns. Later he was named chef de cuisine at Thomas Keller's La Calenda in Napa Valley. In 2021 he came home to lead the school, carrying 30 years of his family's legacy into what's next. On tour, you cook beside him all week.

Our maximum is usually 12 to 14 people per tour. That means you'll move through the city the local way, from street stands to dining rooms, all guided by Chef Kaelin.
Our legacy
Founder Chef and author Susana Trilling settled in Mexico in the late eighties, and her fascination with the country's food and culture became her life's work and mission: to share this with the world.

A warm welcome dinner at the renowned restaurant to kick off the beginning of our week

Visit the Museo Frida Kahlo. Afterwards, we will walk around and lunch at the Coyoacan Market. To end the day with a cooking class in a classic Coyoacan home

After breakfast, we will head to the Museo de Antropología, where we will meet our guide and explore the rich cultural heritage of Mexico.
We will indulge in a seafood and fish lunch at Mi Compa Chava.

An early start traveling by trajinera, we will arrive at regenerative agriculture project Arca Tierra for a wood-fire breakfast.
We'll go for an evening taco run at a famous night time Tacos El Vilsito. -
A guided tour of the UNESCO World Heritage site Teotihuacán followed by lunch at La Gruta.
We will make our way to an exciting cooking class with Susana’s dear friend and chocolatier Mario Terres.

Spend the morning in the Zócalo, La Catedral and ancient Mexico.
We will walk on Calle Madero, and have a delightful lunch at 1:00pm at the beloved El Cardenal.
After lunch, we'll head to the Palacio de Bellas Artes.
For our last meal, we will gather for a special goodbye dinner at a Michelin-star restaurant. -
