An intimate 6-course tasting menu that celebrates the Milpa: the sacred ecosystem of corn, squash, chiles and beans. Kaelin’s menu is a living tribute to the land, changing constantly to reflect what is harvested in the mountains, valleys and coasts of Oaxaca.
You will not only savor deeply rooted flavors but witness the transformation of ingredients through live fire and pre-Hispanic preparation. This is a journey that connects the refined techniques of avant-garde gastronomy with the ancestral flavors of the Oaxacan cuisine.

Kaelin Ulrich Trilling
After years at the pinnacle of the culinary world, serving as Chef de Cuisine for acclaimed Chef Thomas Keller in Michelin-starred kitchens across the USA. Chef Kaelin has returned to his roots. Born and raised in Oaxaca, he now takes the helm at Seasons of My Heart to blend world-class precision with the soul of his heritage.

The six-course menu comprises an appetizer, soup, a masa-forward dish, an entrée, a pre-dessert and dessert. Each edition is unique, designed to feature the four pillars of the milpa:corn, squash, chiles and bean, alongside other local ingredients.
Our menu is respectfully seasonal; we aim to use ingredients that are available according to the harvest cycles of the region, sourced through a trusted local producers we have collaborated with for years.
