Through this food tour, you will discover what the enchanting Peninsula has to offer. Starting off in the colonial city of Merida. We’ll visit the charming and historic city of Valladolid and quaint villages in Yucatan, Campeche and Quintana Roo. The perfect introduction to the region’s rich culture and traditions. The tour concludes on the serene shores of Isla Holbox, a tropical paradise where you'll have time to relax and recharge surrounded by stunning nature and crystal blue water.

The cooking classes are held in the homes of the families that we have had relationships with for the last 25 years. We will be cooking underground in the traditional Pib in different regions in the Peninsula.

Under the guidance of Chef Kaelin Trilling, explore the diversity of ingredients and the ancient, pre-Hispanic Mayan cooking techniques still used today. Discover ancient methods like pib (underground cooking) while participating in intimate cooking classes with local chefs. Highlights include crafting Cochinita Pibil, a succulent suckling pig dish rubbed with achiote and sour orange, wrapped in banana leaves, and slow-cooked underground for 16 hours.

Experience the magic of the Yucatán by exploring iconic Mayan ruins, including Chichén Itzá—one of the Seven Wonders of the World along with Uxmal. Swim in sacred cenotes, believed by the Mayans to purify the soul, and visit artisan communities to witness extraordinary ceramic artistry.
In Campeche, immerse yourself in the vibrant markets, sample unique regional ingredients, and enjoy a cold chocolate and chili tasting, a tradition rooted in ancient Mayan culture.
Surrounded by nature
In Celestún, cruise through the mangrove reservoir to see the famous pink flamingos and native birds. When we reach Isla Holbox, unwind on this idyllic island, go on a fishing trip, and if luck is on our side, make fresh ceviche on board with the catch of the day.

Chef Kaelin Ulrich Trilling
Kaelin was raised at Seasons of My Heart, his mother's kitchen and his first classroom. He left Oaxaca at eighteen to cook professionally: sous chef under James Beard winner Hugo Ortega in Houston, at Eleven Madison Park and Blue Hill at Stone Barns. Later he was named chef de cuisine at Thomas Keller's La Calenda in Napa Valley. In 2021 he came home to lead the school, carrying 30 years of his family's legacy into what's next. On tour, you cook beside him all week.
Why travel with us?
This tour is curated and unique.
The heart of this tour is the village kitchen. We cook underground at the family home of our friends and we visit markets by the hand of local guides who we have collaborated with for years.
Small groups, big enjoyment.
Our maximum is usually 12 to 14 people per tour. That means you'll travel the local way, all guided by Chef Kaelin Ulrich Trilling.
Our legacy
Founder Chef and author Susana Trilling settled in Oaxaca in the late eighties and her fascination with the food & culture became her life’s work and mission: to share this with the world.

Kaelin will give the opening lecture. Then we'll celebrate our welcome dinner at MUGY: Museo de la Gastronomía Yucateca.

After a market visit, we will travel to the town where the famed Cochinita Pibil is from and learn how it is made from scratch.

Traveling towards Campeche, we will be visiting the ancient Mayan site of Uxmal. We will enjoy a traditional Mayan lunch in a charming village eatery.

Start the day with a tour of the historical market of Campeche and later get to know the pueblo of Pomuch for a cooking class with a dear friend in his home.

For breakfast, we will visit a masa dedicated restaurant in the center of Merida.
After breakfast, we will head to the village of Halachó for a pre-hispanic cooking class with Chef and professor Wilson Alonzo.

We will visit the mangrove reservoir in Celestún for a boat cruise to see the famous pink flamingos and many other types of native birds.
After the boat ride, we will eat a seafood meal at a restaurant by the water.

For lunch, we are welcomed into a family’s home for traditional antojitos yucatecos.
There, in the village of Cuzamá, you will have the opportunity to swim in the peaceful cenotes. Afterwards, we travel to Valladolid and stay the night there.

Discover Chichén Itzá, one of the Seven Wonders of the World, where we will have a guided tour of the ruins with our wonderful guide.
Followed by a lunch in a restaurant that has its own cenote, where you will be able to swim and relax.

After breakfast, we will travel to the island of Holbox and relax near the sea for the rest of the day. For dinner, we take a break from Yucatecan food to enjoy magnificent pizza.

We will set off to a morning boat ride and fishing trip. Our captain will prepare a ceviche on the boat for us and we will enjoy ice cold beer on the shore.
For our goodbye dinner, we will celebrate the end of the tour with a wood-fire dinner in one of the most acclaimed restaurants of Holbox.
