Founded by renowned chef and author Susana Trilling and now led by her son Kaelin, our experiences connect you to the roots of Oaxacan cuisine through hands-on classes, market tours and visits to the surroundings villages.

This masterclass us centered on the region’s most cherished crop: corn. We’ll explore its history, demonstrate the nixtamalization process, and craft traditional dishes with fresh corn masa.

MAÍZ MASTERCLASS

Discover chocolate as you’ve never experienced it before. Learn to toast and grind cacao beans in the pre-Hispanic way and use them to make hot drinking chocolate, dreamy desserts and more.

CHOCOLATE COOKING CLASS

We visit Central de Abastos in Oaxaca City and markets in the surrounding villages. There we experience and try street food and seasonal ingredients, learn about ancestral techniques, and the people who keep Oaxacan food traditions alive.

Oaxaca’s villages are renowned for their artisanship, we will visit the studios of different crafts makers and learn about their sourcing and passed-down techniques and have the opportunity to shop for one-of-a-kind pieces.

CULTURE BEYOND FOOD

During our tours we visit Santa Catarina Minas, the heart of ancestral mezcal making in Oaxaca. Here, our maestro mezcalero sources wild agaves from different regions of Oaxaca to later roast in a pit where it also ferments.

After we learn the ancestral technique, you will taste 25 different types of mezcal.
