Day 1 From market to table

9:00 am

Morning

Central de Abastos We begin where Oaxaca begins every morning. The biggest market in the state, with stalls of chiles, heirloom corn, fresh quesillo, dried grasshoppers and produce that doesn't grow anywhere else. A guided eating tour through the organized chaos, with Kaelin to explain what you're seeing and why it matters. You get to taste a variety of many foods, like tamales, cheeses, goat and lamb barbacoa, pre-Hispanic drinks and understand heirloom spices, corn and herbs that are part of Oaxaca’s daily culinary scene.

Midday

Pickup at Gourmand Meeting point, depart for the market

Cooking school From the market, we travel together to the Seasons of my Heart Cooking School located at the Rancho Aurora in Etla, a small agricultural community in a lush setting a half hour outside of Oaxaca City. 

Upon arrival, we will be welcomed by the team and learn more about the story of the cooking school and why Susana settled on this magical piece of land.

Chef Kaelin will explain the menu, Oaxacan culinary traditions, and the ingredients and processes we’ll use to prepare our meal. Everyone will grab an apron and enjoy a hands-on experience of preparing dishes step by step, learning techniques and tasting along the way.

Finally, we get to enjoy the fruits of our labor, sitting down to enjoy the meal we prepared together that celebrates the abundance of the season and the range of flavors unique to Oaxaca, accompanied by traditional beverages. 

Day 2 The Food and Crafts of Valles Centrales

Breakfast

Breakfast at el Desayunador de la Tía Elvia A traditional Oaxacan eatery where corn dishes start by the comal.

Morning

Mercado de Ocotlán We head south to the valleys for the village market, a very different market than Abastos. Here you'll find a variety of foods traditional to this area like empanadas de mole amarillo, nieves oaxaqueñas, hand turned sorbets of local exotic fruits, various breads from sweets to savory, hyperlocal ingredients and Oaxacan chocolate.

late Morning

Visit a home of an artisan family From the market, we visit long-time family friends at their home. For generations, the women of this family have woven on the backstrap loom in the traditional Zapotec style. The same patterns their mothers and grandmothers learned. You'll see the work up close and hear the story behind each design.

Midday

Jacobo y María Ángeles One of Oaxaca's most celebrated artisans. Jacobo and María Ángeles have elevated the art of alebrijes and have exposed in galleries all over the world, long time friends of our family we visit their studio and get to learn the art of wood carving and painting.

Lunch

Lunch at Almú A wood-fired meal in the valley tasting a variety of Oaxacan dishes. An absolute must stop on this side of town, since its a Michelin-Bib recommended to enjoy our afternoon.

AFTERnoon

Mezcal Tasting We visit our friend in Santa Catarina Minas, a fourth-generation mezcalero who produces in the traditional ancestral way. We will taste his different mezcales. He produces over 25 different types, by tasting each one, you’ll learn to deeper understand how mezcal is made and why the tradition of ancestral making should continue.

Kaelin, the son of famed chef and the founder of the Seasons of My Heart cooking school Susana Trilling, was raised in Oaxaca and developed a deep appreciation for food and Mexican cultural traditions. Inspired by his mother's commitment to authenticity, Kaelin recognized the transformative power of cooking.
